Corn cuts cholesterol

BOILED OR roasted corn on the side has always been a part of Jamaica's culinary culture. This habit is getting the thumbs up from various research papers (some of them published in the European Journal of Nutrition and the British Journal of Ophthalmology). Corn is said to be an excellent source of the antioxidant, lutein, that reduces the risk of colon cancer and age-related vision problems.

Corn is also being touted for its cholesterol-lowering properties. It is a soluble fibre that isn't easily absorbed by the body. Therefore when it is eaten, it passes out of the system taking cholesterol with it, according to the researchers. Soluble fibres are also credited with reducing the incidence of some cancers, bowel disorders and diverticulitis.
