Cooking a career

Cayon Walker is a 20-year-old student at Jan's School of Catering in Kingston. He's studying for a career in cooking? Here's the deal on why.

Youth Link: Why did you decide to do catering?

Cayon: I have always loved cooking and being in the kitchen. I did Food and Nutrition in school and passed it with a grade two so I decided to continue that trend.

YL: Why do you enjoy cooking?

C: Because there are various dishes that can be done in the kitchen, especially with simple items.

YL: What's your favourite thing to prepare?

C: I am a lacto-vegetarian (a vegetarian who eats eggs and milk products), so I love to do fruit dishes, especially fruit cakes and flaky pastry (a pastry used for desserts).

YL: Have you ever prepared a meal for someone famous or someone you admire?

C: Yes, back in 1999, I cooked dinner for the then manager of Freezone and I had to bring it to his villa.

YL: Were you nervous?

C: No I knew what I was doing.

YL: Where do you see yourself in the next five to 10 years?

C: Owning and operating my own pastry shop in Kingston - specialising in baking.

YL: What would you say to persons who are considering a career in catering?

C: Do it, it is very interesting - new stuff can be learnt on a daily basis and catering can be a part or full-time career.

YL: When do you finish this course?

C: In August when I will be receiving a certificate in catering

YL: Where do you intend to go after Jan's?

C: To Utech (University of Technology), where I hope to pursue a course in Baking Technology.
