Making use of leftover or stale bread

WASTE NOT, want not!

You have just opened your bread bin and voila, that mouldy smell hits you in the face. You forgot all about that bread.

It has been sitting in there for more than a week and is stale.

In your eyes it is no longer fit for human consumption and you are about to throw it to your dog. But wait, your leftover or stale bread can be used to prepare delicious dishes that you and your family can enjoy.

Consider letting it dry out to make your own breadcrumbs.

Another option is to make French toast with day-old bread.

Just follow your usual recipe, and then place the French toast on a cookie sheet and "flash freeze" in your freezer.

When frozen, remove and place in a freezer-suitable container for easy breakfast any morning.

WAYS TO USE LEFTOVER BREAD:

Slices can be used for:

French Toast

Cheese Pudding

Cheese Fondu

Dry Crumbs can be used for:

Topping or coating

Apple Crisp

Bread Pudding

Croquettes

Meat Loaf

Meat Balls

Stuffing for turkey or chicken

Bread Pudding De Luxe

12 slices of bread

2-3 tbsps. butter or margarine

1/2 cup grated coconut

1/4 cup cherries (optional)

1/2 cup raisins

2 tbsps. rum, sherry or wine

2 eggs

1/2-3/4 cup sugar

1/2 tsp. grated nutmeg

1 1/2 cups milk

1/2 tsp. grated cinnamon

METHOD:

1. Cut crust from bread, butter and cut into cubes or strips.

2. Place in a greased baking dish, a layer of bread, a layer of coconut, raisins and cherries. Repeat layers until all ingredients are used up.

3. Beat eggs, milk and sugar. Add a pinch of salt, nutmeg, cinnamon and wine or rum.

4. Pour mixture over bread, coconut and fruit. Leave for 1/2 hour if preferred.

5. Bake in a moderate oven 350ºF for
35-45 minutes until firm.

Serve with ice cream, whipped cream or yoghurt.
