Bake and enjoy your own delicious Easter bun

Preparation 20 minutes

Baking Time: 1 hour

Yield: 9 slices

1 bottle stout

1/2 tbsp. browning

3/4 cup brown sugar

1 tbsp. molasses

1/4 cup honey

1 tbsp. guava jelly

2 tbsps. soft margarine

3 cups counter flour

3 tsps. baking powder

3-4 tsps. mixed spice

1 tsp. cinnamon

1 cup raisins

1/2 cup mixed peel

1/2 cup cherries

METHOD

1. Preheat oven to 160º C.

2. Warm stout on very low flame and add browning, sugar, molasses, honey, guava jelly and melted margarine. Stir until dissolved.

3. Sift together flour, baking powder, cinnamon and spice. Add chopped fruits to mixture.

4. Add liquid to flour mixture, stirring until properly mixed.

5. Bake in a greased loaf pan 29 cm x 12 cm x 6 cm.

6. Allow to cool, then glaze with melted margarine and honey.

Note: Strawberry preserve can be substituted for guava jelly. Raisins must be soaked before combining with the other ingredients or the baked bun will be dry.

Easter Bun Cake

5 otaheite apples

6 ozs. flour

6 ozs. margarine

(not fat reduced)

3 large eggs

1 tsp. baking powder

Cinnamon to taste

Dash rum

6 ozs. sugar (mix 4 ozs.

white with 2 ozs. icing sugar)

TOPPING FOR BUN

4 ozs. icing sugar

1 otaheite apple with

cinnamon

Lime juice added to icing

sugar to cover cake

Cook for about 30 minutes

in an 8-inch tin.

METHOD

Peel core and small dice apples in a frying pan. Heat a little butter and some cinnamon. Add all apples. Cook until slightly soften. Add a dash of rum. Set aside to cool.

BUN MIXTURE METHOD

Put all ingredients in large mixing bowl and whisk together. When they are all mixed, add to the batter 4/5 of the cooked otaheite apples. Stir in. Put batter into 8 inch-cake tin. Bake for around 30 minutes until springy to touch.

TOPPING

Mix lime juice with the icing sugar. Spread over top of the cake. Use remaining apple mixture and sprinkle over top of the cake.

Sweet Potato Easter Bun

Preparation time: 10 minutes

Baking time: 45-60 minutes

Yield: 20 slices

1 cup sugar

2 tbsps. molasses

2 tsps. mixed spice

1 bottle stout

2 tbsps margarine

1 medium egg

2 cups flour

1 1/2 cups sweet potato

boiled (crushed)

2 tsps. baking powder

1 cup (crystallised) otaheite

apples/guavas/sweet potato

(mixed peel)

METHOD

1. Melt margarine, and beat egg.

2. Dissolve sugar, molasses and spice in stout. Add margarine and beaten egg.

3. In a bowl, combine flour and baking powder.

4. Gradually add liquid mixture to dry ingredients, beating well.

5. Add mixed peel and mix well.

6. Bake in a greased loaf pan at 160ºC for about 45-60 minutes, or until a skewer inserted comes out clean.

7. Glaze with honey and melted margarine.
