IN THE KITCHEN - Ital cuisine
published: Sunday | October 5, 2003

Welcome to our new Outlook feature in which all the excitement of local cooking and new trends in the kitchen will be distilled and placed on the burner for your Sunday enjoyment. Bon appetit.

HOW EXCITING can Rastafarian cooking get?
Did you think that the ital diet was boring? Think again!

Outlook checked out the vegetarian/ital menu at the Ashanti Oasis Vegetarian Restaurant in Hope Gardens, run by Rastafarian Sister Yvonne Hope and we were impressed. The choices are endless and we dare say you could not exhaust them in a month of dining.

The Jamaican vegetarian dishes and beverages, all labelled with the names of Jamaican reggae songs, include:

Stir it up A tofu and garden vegetable stir fry.

Catch a Fire Hot curry tofu.

A Prelude to a Kiss A vegeball in Ashanti seductive (sweet and sour) sauce.

Run Up a variation of the traditional Run Down.

Hush Baby Mother Hot spicy soya milk with honey.

Bide up with Reasoning (Bunny Wailer) A selection of bush tea.

Is this Love A specially seasoned split pea soup.

Fire Burning vegetable balls with hot sauce.

Peaceful Woman callaloo and rice steamed in coconut milk.

Love is the Answer Tofu cheesecake.

Steppin' Razor (Peter Tosh) Brown stew tofu.

Satisfy my Soul Ackee with bean curd.

Dreamland Bean curd simmered in Ashanti sauce.

Sattamaassagana Tofu simmered in a delicate peanut sauce.

Mississippi Goddam baked tofu in a lively Creole sauce.

Doctor Feel Good Herbed garlic bread and hummus.

Dip and Fall Back Ashanti dipping sauce with crudites.

Guiltiness Hot spicy fritters with a dipping sauce.

Dutty Tough vegetable patty (with whole wheat bread).

At the Ashanti Oasis Restaurant, the list of beverages include such creations as Black Heart Man oats and soya milk blended with Irish moss, molasses and brewers yeast. We also enjoyed the otahieti apple juice which was quite refreshing.

This is a little inspiration for our budding cooks who want something out of the ordinary to surprise their loved ones with. Make up your musical menu, or if you want take out, you now know where to find it!
