Chicken salad with the works

THIS SALAD from Deli Works, Sovereign Centre, St. Andrew is a main course size containing vegetables, protein and starch. Chef Sanjay Williams notes that Deli Works tries to keep salads healthy by eliminating red meat.

With the temperatures soaring every day, everyone can have a chicken salad with a fresh fruit juice. At Deli Works, there is a salad bar practically every day. A small salad costs $200 and up depending the size of the plate.

2 lb grilled chicken breast

1/4 cup lemon juice

1/2 cup olive oil

1 cup blanched green beans

1 small red onions

1/2 tsp. sugar

1 small yellow squash blanched

1 small green bell pepper

1/4 tsp. salt

1/4 tsp. ground black pepper

1 1/2 lb romaine lettuce

Pinch of red pepper flakes

Small sweet potato, sliced and fried for garnish

METHOD

Combine oil, lemon juice, salt, pepper, pepper flakes and sugar to make dressing. Julienne all vegetables and chicken and toss with dressing.

Serves 6.
