Ah! Christmas breakfast
published: Thursday | December 22, 2005

Yum! This is just what the stomach needs to start Christmas day - ackee and saltfish, fried plantains, steamed callaloo, boiled banana, and fried dumpling. - PHOTOS BY CARLINGTON WILMOT/FREELANCE PHOTOGRAPHER

BY NOW you have planned the Christmas day menu and all the essentials are included. If you are in the country parts, chocolate tea and duck or crown bread make nostalgic extras and if you are in the city or a guest at a hotel, you can try the continental alternatives such as fluffy omelettes that are on the menu.

If dinner is late evening, breakfast can comprise all the traditional favourites including ackee and saltfish, fried dumplings, roast breadfruit and fried sprat with bammy. The children will only have time to take meagre bites between getting familiar with their shiny new presents and mother will be busy supervising the roasts in the oven. So go light and save the appetites for dinner.

However, get out the fine linens and china, polish the silverware, say grace and dig in. Or, catch some of the items from The Courtleigh Hotel in New Kingston.
