NOW THAT Christmas is over you have an abundance of ham, turkey, chicken and beef leftover. What do you do with it all?
Don't stress yourself for the next week as you don't have to go to the supermarket or slave away in the kitchen. Use it all up in various ways. Start with sandwiches which are great for almost any leftover meat which is especially quick and easy for the children. After a while just eating leftover meals can be monotonous so spice them up with some of these tasty treats and lighten the load in your fridge.
HAM SALAD
Just dice bits of ham and toss in a mixture of your favourite leafy vegetables for a delicious and relatively healthy snack.
BARBECUE CHOPPED HAM
Tired of ham sandwiches? The secret is in the sauce. Try this one to get their taste buds watering.
1 lb chopped ham
1 cup Ketchup
1 cup water
1 onion, diced
4 tbs brown sugar
2 tbs vinegar
Cook sauce for half hour. Add meat to sauce and heat thoroughly. Makes about eight sandwiches.
FRIED RICE (HAM)
5 cups cooked steamed rice
4 strips bacon, chopped
Chopped or sliced ham
3 cloves garlic
1/2 slice onion, chopped fine
2 sticks celery, chopped
2 pieces carrots, chopped
1/2 cup green peas
1/2 cup shrimp (Optional)
1/4 cup oyster sauce
2 green onions (for garnish)
1 fried scrambled egg for garnish
Brown bacon and sauté garlic until golden brown. Mix ham, onion, all vegetables, and shrimp together in skillet. Pour oyster sauce over vegetables and cook until vegetables are half cooked. Mix in steamed rice and stir all together over low heat.
GREEN RICE (HAM)
1/2 cup melted margarine
1/2 cup chopped onion
1 1/2 cups sharp Cheddar cheese, grated
2 eggs, beaten
2 cups milk
1 (10 oz) pkg frozen chopped
broccoli
1 cup cooked rice
Garlic salt to season
Cubes of ham, optional
Mix all ingredients together and put in a buttered casserole. Bake in 300 degree oven for one hour.
CHICKEN
Add cubes of your leftover chicken to your Caesar salad.
LEFTOVER CHICKEN SOUP
Leftover chicken
1 potato
1 carrot
1 onion
1 dash salt
1 dash pepper
1 dash parsley
1 dash basil
Strip the remains of your leftover chicken and place whatever meat you may have gathered in a pot. Chop potato carrot and onion and toss in the pan. Put enough water in the pan to just cover ingredients.
Add spices to taste. Cover pan and cook on low or simmer for a few hours, until vegetables are tender.
