Feeding the sweet tooth

Mrs. Rachael Henriques, 32, is a businesswoman with a burning passion for the kitchen. So, in the last two months, she decided to test the waters in the baking industry.

Mrs. Henriques, manager of Sandal Signature Guest Programme, has started baking from home for friends and family. She has been cooking since she was about five years old when her mother, Angela Chandley, kept both Rachael and her sibling occupied by letting them help out with the baking. Though she cannot remember at what age she first baked on her own, she noted that it turned out well.

She told Food that for the last two years, she has been considering going into baking full-time. But she decided to 'test the waters' first."

"People, especially my friends, have been very receptive," said Mrs. Henriques.

Destined for cookies?

It may be destiny that she has ventured out into the baking world, as she has a terrible sweet tooth. Plus, she has had a preference for chocolate chip cookies from childhood. "Many people have asked why don't I bake cakes as opposed to cookies, but cookies are my personal preference." Moreover, she sees the cookie business a new market ready to be explored, as she said most bakeries do cookies, but not exclusively.

For her, cookies are the perfect little dessert to have after a meal. They have caught on and are a favourite at bridal showers, birthday parties, and among people who are just going out on a trip and need something to munch on.

"Also, they make a good gift because I have the gift box packaging which has been very popular so far."

Currently, she has been baking out of her home for friends and families. But she is taking small strides to see where the business takes her and to see how it succeeds.

Philosophy: Life is too short, so I am always up for trying new things.

Favourite cookie to make: Chocolate chip and ice cookie cookies decorated with icing.

Favourite food: Chocolate.

Food I dislike: Beef. I do not like red meat.

Wish: I hope there is a market that will appreciate cookies.
