Papaya and apple chutney

INGREDIENTS1 cup white vinegar

1 cup brown sugar

2 cups chopped papaya

1/4 tsp. allspice powder

1/4 tsp. whole cloves

1tsp. ground cinnamon

1 onion

1 hot pepper

1/2 tsp. salt

METHOD1. Put the vinegar in a saucepan and bring to boil. 2. Add the sugar, stir, then add all the other ingredients.3. Stir, then cook slowly on a low heat for 30 minutes until tender and thick.4. Remove the hot pepper, and spoon into sterilised jars.

Serve with grilled meats.

SPICY TOMATO SALSA

6 large, ripe tomatoes, peeled

2 tsp. minced garlic

1tbs olive oil

1tbs fresh lime juice

1/2 scotch bonnet pepper, seeded and chopped

1/2 cup finely chopped chives

1tsp chilli powder

2 tbs. finely chopped cilantro

METHOD1. Chop the tomatoes, and combine with the garlic, olive oil, lime juice, pepper, chives, chilli powder, and salt and freshly ground black pepper. 2. Taste and adjust seasonings.

3. Serve with corn chips, grilled chicken. Makes about two cups.
