Here are a few tips for stretching the food dollar from Dr Heather Little-White, food and nutrition consultant:
published: Tuesday | April 1, 2008

For rice, flour and other bulk items arrange with family and friends to make bulk purchases at wholesale prices. For example, a 100 pound bag of flour can be shared between five to eight households.

Make one-pot or combination tasty dishes to 'stretch' rice, example left-over rice can be made into seasoned rice with vegetables and small amounts of protein added. Soups and stews are economical and filling and can utilise bits and pieces of meat, vegetables, ground provisions and/or dumplings.

Make dumplings smaller and add available vegetable like carrot to enhance nutrition.

If you live in an area with locally grown produce (yams, sweet potatoes, dasheen, callaloo, pumpkin, carrots), use these instead of rice and flour.
